Creamy Cinnamon Peach Salad
I couldn't decide whether to call this recipe a salad or a dessert—that's how wonderful it is. A sprinkle of marshmallows and a dollop of low-fat whipped topping completes this Creamy Cinnamon Peach Salad. Thanks so much to my friend, Susan, for the original recipe. She said it was delicious and I agree!!
I didn't have to do much to flip Susan's recipe, but I made sure any changes I made built on existing flavors. This simple and low-point treat is delicious with all of the melted marshmallows, jello, fruit, and spices it contains. It is a perfect way to start the New Year!
As with any Flip2Tasty recipe, my family was the first to taste this one. I served them small bowls and waited for their reaction; and to my great pleasure I received empty bowls and requests for second helpings! Ingredients:
- 2 pkg (3 oz) Sugar Free Peach Jell-o
- 1 pkg (3 oz) Sugar Free Fat Free Vanilla Pudding
- 1 tsp Cinnamon
- 3 cups Water
- 1/2 tsp Almond Extract
- 2 cups mini Marshmallows
- 1 lg (28 oz) can sliced Peaches, in natural juices
- 1 (16 oz) pkg Frozen Sweet Dark Cherries, (optional)
Directions:
- In saucepan, combine Jell-o mix, vanilla pudding mix and cinnamon. Stir.
- Add water and almond extract. Stir. Cook over Medium heat until mixture thickens.
- Add marshmallows. Stir until marshmallows melt. Remove from heat.
- Fold in peaches with juice and cherries. Pour into 13 x 9 glass dish. Arrange fruit. Chill until set.
