Simple and delicious twists on healthy, home-style recipes



Why this recipe?  My good Texan friends, Janelle and Randy, introduced me to this wonderful Southern- style Asparagus Casserole.  My favorite part of the dish was the creamy sauce and the hard-boiled eggs.  I have never had such a delightful asparagus side dish!




The Flip:   Instead of using your typical high-sodium canned asparagus, I used fresh asparagus—that way I could put more asparagus in the recipe!

I cut the asparagus (removing the tough part of the stalks) and immediately steamed them so they would have a head start in the baking process.





Next, came a layer of flavorful red pimiento's, followed by—my favorite—Perfect Yellow Yolk Hard-Boiled Eggs.  Check out the bright yellow yolks—and click the link above to learn how I ensure no grey rings ever surround my yolks!

I must give credit to my dear friends, Ken and Bev, for their free-range farm eggs—they are delicious!





A big part of the flip was replacing the canned soups used in the original recipe with 98% fat-free soups.  I used the canned soups to make a garlic-herb sauce to drizzle over the eggs!

For the topping, I replaced the croutons with Panko crumbs and the cheese with sharp 2% Cheddar.

My thoughts:  This is a great easy-to-make casserole for RVing, picnics, and potlucks!  If you're not a 2% cheese fan, consider mixing equal parts of sharp cheddar with your 2% cheese. It may add a few calories and points, but it's a great way to start working with reduced-fat cheese.  Enjoy!

Why this recipe?  I knew this recipe was perfect to share on Flip2Tasty after I had it for dinner on our recent trip to Virginia.  It was very flavorful, and perfectly sweet.

The Flip:  The original recipe was sauteed, but I made a casserole instead.  It was easy—I just placed it in the oven and let the magic happen—it smelled outstanding!

First, I layered white onions in the bottom of my casserole dish.



I added sliced apples next.

Tasty Tip: When you slice your apples, remember to place the slices in a large bowl of water with lemon juice or Fruit Fresh to keep them from turning brown!

You'll want to use a tart apple; I chose Granny Smith.




Once I layered my apples on top of the onions, I sprinkled them with sweet brown sugar.




I then turned my attention to the pork chops:

I chose to use thin-cut pork chops and a savory rub composed of sage, thyme, kosher salt and a little nutmeg—I gave them a quick sear and laid them on top of my brown sugar apples!

The only thing left was to slow bake the casserole and let the sweet and savory flavors come together on their own!




My thoughts:  Make sure to cover your casserole tightly with foil and don't peak—your chops will be tender and cooked to perfection!  With a recipe this healthy, you don't have to feel guilty if you serve yourself seconds!  Enjoy.

Why this recipe?  If I'm going to break the rules and eat high calorie food, Lasagna is one of my favorites! A dinner size portion of Lasagna at my favorite Italian restaurant is approximately 21 points—almost a day's worth of points! That's why Lasagna is a perfect Flip2Tasty challenge.  

The Flip:   The first thing I replaced was the pasta.  By using Barilla Classic Blue Box Oven-Ready Pasta sheets I cut the calories, fat, carbs and points in half!  You'll be surprised by the excellent quality of this pasta product by Barilla.

Next, I used my Flip2Tasty Italian Turkey Sausage (99% fat-free) in place of normal Italian Sausage.  Instead of preparing a time-consuming homemade red sauce, I used Prego Light Smart, traditional sauce; it adds incredible flavor.

However, I didn't change the most important part of the Lasagna—cheese!!  I mixed a large flavorful bowl of cheeses and herbs for spreading between layers.


My kitchen smelled amazing while the lasagna was baking.  It was bubbling hot and loaded with gooey Mozzarella cheese when I pulled it out of the oven.  My family loved this lasagna dinner—score one for Mom!




My thoughts:  I make my Italian Turkey Sausage in advance and keep it in our freezer so it's ready for any recipe—like my Italian Turkey Sausage Sandwich!  

When serving lasagna, I drizzle red sauce over each piece—YUM!  It's wonderful to know this healthy and low-point Lasagna made my family think they were eating the original recipe!  This recipe freezes well for quick and delicious meals when you need them.

Why this recipe?  When I think of comfort food, nothing compares to a homemade Chicken Pot Pie!  My recipe is healthy, easy to prepare, and hard to resist when it's fresh out of the oven!

The Flip:  Instead of a double pie crust, I used a thick and flavorful biscuit topping—but not just any biscuit—a Cheddar Bay Biscuit, Red Lobster style!  Also, there is no added butter or salt in this recipe.  You can easily make a Turkey or Beef Pot Pie by changing the stock and replacing the chicken with your choice of meat.




My thoughts:  White wine was a special ingredient in my Chicken Pot Pie—the wine is subtle and gives this dish a wonderful flavor for some lucky company!  You can certainly use stock in place of the wine if you prefer.  Pot pies are very flexible—any veggie you have available can be added to the recipe!  Enjoy.

I really enjoyed flipping my traditional Green Bean Casserole.  The flipped version turned out to be every bit as flavorful as the original, but healthier and much lower in points!  This dish will certainly show up on my family's holiday table.

When I Flip recipes, I never know what the final result will be—with this recipe I knew I was on the right track when my kitchen filled with an appetizing aroma!  When I removed my bubbling casserole from the oven I couldn't resist scooping up a dish.



The crispy topping on my casserole features my healthy Master Breadcrumb Mix and some delicious french fried onions (I couldn't forget those).  You don't need to wait for the holidays to make this simple Green Bean Casserole. Your family will love it—I received two thumbs up from mine!  Enjoy.

Each year, Pecan Sweet Potato Casserole is a favorite on our family Holiday Dinner Table.  The original recipe is from my favorite Southern-style cookbook written by one of the masters of Southern and Cajun cooking.  This year, I tackled "flipping" this buttery, sugar-packed recipe to a healthier, low-point dish.

Pecan Sweet Potato Casserole is rich to the pallet, so it's important that I was able to maintain the richness.  Without compromising flavor, I removed 5 tablespoons of butter and 1 1/2 cups of sugar. Together, that's approximately 1670 calories; 58g of fat, 300g of carbs, and 300g of sugar—removed!!

Hot from the oven, the crunchy pecan and coconut topping on my Flipped Pecan Sweet Potato Casserole looked just as delicious as its unhealthy counterpart—and sure enough, it passed the taste test with flying colors!  You will be surprised to learn what I used in place of all the sugar in the recipe.  Take a look and let me know what you think!  Enjoy.
