Flipped Oriental Sesame Cucumbers



I have so many cucumbers from the garden ready to eat!  I love Grandma's standard cucumber and vinegar recipe (that's her vinegar cruet you see), but what's great about this Oriental Sesame Cucumber recipe it's an entirely different version full of wonderful flavors! Especially the longer they marinate.  Soooo good! 

As with any recipe, I encourage you to adjust ingredients to your liking.  I love the flavor of  toasted sesame oil, so I find myself adding a 'dash' more!

Ingredients:

  • 3/4 c Garlic Wine Vinegar  
  • 3/4c Water
  • 1 tbsp White Sugar
  • 1 tbsp Soy Sauce (low sodium is fine)
  • 1/2 tbsp Toasted Sesame Oil
  • 3 Garlic cloves, minced
  • 1/2 tsp Black Pepper
  • 2 large Cucumbers, peeled and sliced
  • 1 medium Onion, sliced 
Directions:
  1. In a small mixing bowl, mix vinegar, water, sugar, soy sauce, sesame oil, garlic and black pepper.
  2. Slice cucumbers and onion (I cut my onion into rings and then slice rings in half).  Place them into an airtight container.  
  3. Pour mixture over cucumbers and onions.  
  4. Cover.  Marinate for several hours in refrigerator.
