Apple Cinnamon Streusel Coffee Cake



Why This Recipe?  Happy 100th Birthday, Aunt Caroline—I couldn't be there for the special day so I want to honor you with this Flip2Tasty post!  Your fine china cup, pearls, and a delicious slice of Apple Cinnamon Streusel Coffee Cake make for a perfect picture!

The Flip:  This recipe was incredibly easy to make.  It's semi-homemade, so it's really quick!  It is essentially composed of Betty Crocker Cinnamon Streusel Muffin mix, angel food cake mix, and fresh apples.

Normally this recipe calls for oil and butter, but I used applesauce in its place. To make the applesauce creamy I stirred in instant pudding mix—it made the coffee cake so moist!

My thoughts:    This Coffee Cake is perfect for breakfast with a freshly brewed cup of coffee or tea.  I will definitely try this recipe with other fruits—I bet peaches would compliment this cake well!

It's also great for snacks!  For a healthy treat, I sent a slice in my son's school lunch.  This is the kind of treat Weight Watcher members can enjoy, too—it has a low point value!  I hope you enjoy this simple semi-homemade Streusel!

Ingredients:

  • 1 (15.2 oz) box Betty Crocker Cinnamon Streusel Muffin Mix
  • 1 1/4 cup Angel Food Cake Mix, dry
  • 2 Eggs
  • 1/2 cup Natural Applesauce, unsweetened
  • 2 1/2 Tbsp Instant Vanilla Pudding mix, sugar-free, fat-free
  • 3/4 cup Water
  • 2 Large Apples, peeled, cored and chopped   (float in water with lemon juice to keep from turning brown)
Directions:
  1. Spray a 9 x 13 pan with baking spray and lightly coat with flour. Remove excess flour by tapping or shaking over your sink/trash. Set aside. 
  2. In small bowl, combine applesauce, pudding mix and water.  Stir until smooth.
  3. In large mixing bowl, combine muffin mix (not streusel mix), angel food cake mix, eggs and applesauce mixture.  Mix with an electric tabletop or hand mixer until smooth.  Pour batter into prepared 9 x 13 pan.
  4. Remove apples from water.  In small bowl, combine chopped apples with muffin streusel mix. Stir until completely coated with mix.  Sprinkle apples over the top of cake batter.
  5. Bake at 350 degrees for 25-30 minutes until golden brown and toothpick comes out clean when inserted into middle of coffee cake.
