Flipped No Bake Chocolate Cookies
When it comes to No-Bake Cookies, I think of my brother Tim; they're his favorite! I'm pretty sure he doesn't need a recipe—for him it's permanently committed to memory. You've always been a great cook, big brother, so this flipped one's for you!
My flipped No-Bake Cookies are perfect for holiday parties or a quick treat on the run! I can eat No-Bake Cookies (two is plenty) and still maintain my weight—they're healthy and low on points!
You're not going to believe what I did to flip the recipe. I used my favorite Fiber One bar along with some of the usual flavors and ingredients in No-Bake Cookies. There was no need for butter or sugar! Take a look at the recipe; I'd love to hear your thoughts! Enjoy.

Ingredients:
- 12 Fiber One Oats and Chocolate Chewy Bars, break into small pieces (Featured in the Flip2Tasty Store)
- 1/4 cup plus 2 Tbsp 2% Milk
- 1/4 cup Peanut Butter, smooth
- 1 tsp vanilla
Directions:
- In saucepan, add Fiber One pieces and milk. While continuously stirring, cook over Medium Low heat until bars have melted. Reduce heat to Low.
- Continue stirring, cook for 2-3 minutes.
- Add peanut butter. Stir well. Remove from heat.
- Add vanilla. Stir.
- On wax paper lined baking sheet, drop rounded tablespoon full of cookie mixture.
- Put into freezer to set up. Once cookies are firm, transfer over to container with lid. (Layer between sheets of wax paper)
- Store in freezer.

ReplyDeleteHi Lori! Yes, you can use a double boiler However, due to the whole grain oats, you'll need to cook it longer. I can't tell you how much I'm enjoying grabbing no-bake cookies for a snack! Thanks for following Flip2Tasty. Your comments are special and very much appreciated!! :) Terri
