Strawberry Tropical Frozen Dessert



I couldn't wait to finish taking this photo so I could sit down and eat.  The word increeeedible immediately came to mind!  Wow, this is a big piece of dessert!  It's hard for me to wrap my mind around something "tasting good" and "being good" for me at the same time!

I discovered this recipe through one of my dearest friends, Jill.  The very first time we met I knew we would be the best of girlfriends seeing as Jill loves to cook and put together awesome food spreads!  Two peas in a pod.

So girlfriend, this flipped recipe is for you!  (By flipped I mean I took out half a cup of sugar, re-worked Jill's recipe a bit and lowered the points), Take a look...


Flipped Strawberry Tropical Frozen Dessert
Servings: 12  Serving size: 1  Calories: 127  Fat: 2g  Carbs: 15g  Fiber: 1g  Protein: 3  Sugar: 12g Sodium: 231mg
Old Points: 3  Points+: 2 (Counting fresh and unsweetened fruit as zero)

Ingredients
  • 2 cups frozen no-sugar added whole strawberries, thawed and halved
  • 1 (15 1/4oz) can unsweetened crushed pineapple,  do not drain
  • 1 1/2 cups sliced banana (2 medium)
  • 1 (8oz) fat-free cream cheese (don't let the phrase "fat free" discourage you!)
  • 1 (8oz) container low-fat frozen whipped topping, thawed
  • 1 pkg. sugar-free/fat-free vanilla pudding mix 
  • 1 tsp vanilla

Directions
  1. In a large bowl, beat cream cheese using a hand or counter top mixer on medium speed until smooth
  2. Add vanilla pudding mix.  Mixture will be thick.
  3. Continue mixing while slowly adding the juice from the thawed strawberries.
  4. Fold in by hand the whipped topping, strawberries, pineapple, and bananas.
  5. Spread in a 9X13 dish and cover with aluminum foil.  Freeze.
  6. Before eating let food thaw at room temperature for about 10 minutes.
