Italian Sausage Lasagna


Why this recipe?  If I'm going to break the rules and eat high calorie food, Lasagna is one of my favorites! A dinner size portion of Lasagna at my favorite Italian restaurant is approximately 21 points—almost a day's worth of points! That's why Lasagna is a perfect Flip2Tasty challenge.  

The Flip:   The first thing I replaced was the pasta.  By using Barilla Classic Blue Box Oven-Ready Pasta sheets I cut the calories, fat, carbs and points in half!  You'll be surprised by the excellent quality of this pasta product by Barilla.

Next, I used my Flip2Tasty Italian Turkey Sausage (99% fat-free) in place of normal Italian Sausage.  Instead of preparing a time-consuming homemade red sauce, I used Prego Light Smart, traditional sauce; it adds incredible flavor.

However, I didn't change the most important part of the Lasagna—cheese!!  I mixed a large flavorful bowl of cheeses and herbs for spreading between layers.


My kitchen smelled amazing while the lasagna was baking.  It was bubbling hot and loaded with gooey Mozzarella cheese when I pulled it out of the oven.  My family loved this lasagna dinner—score one for Mom!




My thoughts:  I make my Italian Turkey Sausage in advance and keep it in our freezer so it's ready for any recipe—like my Italian Turkey Sausage Sandwich!  

When serving lasagna, I drizzle red sauce over each piece—YUM!  It's wonderful to know this healthy and low-point Lasagna made my family think they were eating the original recipe!  This recipe freezes well for quick and delicious meals when you need them.

Ingredients:

  • 1 lb Flip2Tasty Italian Turkey Sausage, cooked thoroughly, medium crumble  (any Italian turkey sausage is fine but will change nutritional value)
  • 1 (9 oz) Classic Blue Box, Oven-Ready Pasta Sheets (located on shelf with other Barilla pasta)
  • 1 (15oz) container Ricotta Cheese, part skim milk
  • 3 cups shredded Mozzarella Cheese, part skim milk  (reserve 1 cup, set aside)
  • 1/2 cup Provolone Cheese, shredded
  • 2 eggs, beaten
  • 1 tsp Basil, dried or 1 Tbsp fresh Basil, chopped
  • 1 Tbsp Garlic, minced
  • 1 tsp Onion Powder
  • 1 tsp Oregano
  • 1 (24 oz) jar Prego Light Smart Sauce, traditional  (additional jar to sauce lasagna pieces, optional)
  • 1 (14.5 oz) can tomatoes, crushed  
  • 1/3 cup water  
Directions:
  1. In mixing bowl, combine ricotta, mozzarella, provolone, eggs, basil, garlic, onion powder and oregano.  Mix well and set aside.
  2. In skillet, combine red sauce and tomatoes.  Bring to a simmer over medium-low heat.  Add cooked Italian turkey sausage.  Simmer for 3 minutes.  Remove from heat and set aside.
  3. Spray 12 X 8  pan with baking spray. 
  4. Divide pasta sheets into three equal stacks.  (Pasta sheets snap easily to fill in each layer!) 
  5. In bottom of pan, spread 3/4 cup of meat sauce. Cover with first stack of pasta sheets. Spread half of cheese mixture on top of first pasta layer to edges of pan.
  6. For second layer: Spread half of remaining meat sauce to edges of pan. Cover with second stack of pasta sheets. Spread remaining cheese mixture over pasta sheets to edges of pan.
  7. For third layer:  Cover with remaining stack of pasta sheets.  Spread remaining meat sauce on pasta sheets to edges of pan.  Top with reserved cup of Mozzarella Cheese.  
  8. Pour water around outer edges of lasagna.  
  9. Cover with foil.  Bake at 375 degrees for 45 minutes.  Remove foil and bake an additional 15 minutes. 
  10. Let stand 15-20 minutes before serving.  To serve:  Top each slice with additional red sauce, (optional).
